Although I’m not a big fan of spare-ribs, nor an avid culinary critics, but so far this is how the best bbq spare-ribs look like:
If you’re interested, you can find it in Monterrey, Mexico at La Embajada restaurant. The meat was very moist, tender, tasty and the most important thing is THICK! Yes, THICK! Most spare-ribs I’ve ever had before always with lots of bones but skinny meat. And I personally hate that fact, because if I order something I would like to get the best of it, including meat.
I hope one day I can get a similar one that is located just around the corner of Amsterdam, no need to wait until visiting Mexico again.
